As a child I had the good fortune to travel to France for several summers, and it was there that I cultivated a lifelong appreciation of good bread. My wife has dubbed me "Breadman" as I am frequently more excited by the bread offering at a restaurant than the main course.
Imagine my delight while spending an afternoon in Sayulita last fall, in finding Panino's, an artisan bakery, deli & cafe. This delightful shop with outdoor seating offers a plethora of baked goods that will evoke the Breadman in anyone. All of the artesanal breads are handmade with wild yeast, water without chlorine, salt and wheat flour under the supervision of owner Denis Moraga Pastori.
Good fortune followed me back from Sayulita in a manner of speaking when, early this year, Denis opened his 2nd Panino's in Bucerias for those of us tired of the over-the-hill trek, no doubt. As with the Sayulita cafe, the Bucerias location offers outdoor seating, and of course all items can be ordered “para llevar”/to go.
Breakfast selections include traditional offerings of danish, croissants, pan de chocolates, bagels and other delicious pastries and a variety of coffees and coffee drinks. A breakfast sandwich of egg, cheese and ham or bacon can be ordered on a baguette, a bagel or a croissant. Coffee & a danish are offered for less than 20 pesos.
The Lunch and afternoon menu features panini sandwiches and salads. Personal favorites are the Pesto Chicken breast and the Turkey, Bacon, Avocado & cheese paninis. Other selections such as BLT, Tuna/avocado, Mushroom/Spinach/Cheese and Club House are also available. Caesar, Mixed Green, Caprese (Tomato, Mozzarella & Basil) and Tuna salads can be ordered half or full portioned.
I would be remiss if I didn't mention the scrumptious focaccias that Panino's offers: Vegetarian, Bacon/Onion/Tomato/Cheese and Black & Green Olive. Grab one to heat up later. And don't miss the panques available everyday by the slice; lime, orange and carrot all with a delicious butter crean frosting.
The main reason that you will find yourself returning to Panino's is the bread. The variety of handmade bread includes: country loaf (pain de campagne), French and rustic baguettes, olive bread, parmesan bread, multigrain bread, focaccias, ciabattas and speciality breads such as Roquefort and walnuts. Baguettes, standard loaves, rolls, rye, whole grain, all are freshly baked and all tend to sell out as the day progresses. So do like I do and get there early, grab an espresso and a pastry and then pick up a loaf to go.
