Dear Anna,
One time I bought a carton of a dozen
eggs and eleven of them had double yolks (re: PV Mirror
119) I, too, was curious as to how that could have happened.
What I found out was that eggs are
candled before they are placed into cartons to grade
them and to make sure that they are in good condition.
Eggs with double yolks are usually set aside to be sold
to bakeries because they cannot receive a grade rating.
Sometimes one of the set aside cartons accidentally
finds its way to market. That is why you generally never
find an egg with a double yolk but when you find one
in a carton you usually find several.
