APRIL, CHILDREN & YOUTH MONTH.

Puerto Vallarta RestaurantIn 1954 the UN General Assembly adopted a resolution, which is stable-the ¨ Universal Child Day ¨ With a view to promoting an annual day devoted to brotherhood and understanding among all children in the world. The agency responsible for that project was the Unicef.

Since then, they are more than 100 countries that hold the date, although the date varies by country.

It is in Mexico on April 30.

In Mexico to celebrate this date, is organizing a series of cultural activities, entertainment and artistic expression, as well as the distribution of toys to underprivileged children.

Children's Day is also an opportunity for authorities and society in general meet the needs of the child pablaciòn and likewise implement and strengthen programs for aid and protection, when those rights are violated, for example, sexual exploitation, work , etc.

RECIPE OF THE MONTH.

Enchiladas Tapatia (from Guadalajara Jalisco)
The State of Jalisco is considered within the Mexican Republic, as the state more representative of our country. Birthplace of Mariachi and tequila, is also home of good food and a long gastronomic tradition.

This month we present a simple but tasty recipe for enchiladas that are scrumptious.
Preparation time 30 minutes.

Ingredients:
150 grs. guajillo chile
1 medium onion
1 clove garlic
Salt to taste
Corn Oil
Medium 12 tortillas
350 grs. Striped fresh cheese for garnish
Romaine lettuce ½
150 grs. of the above-described cheese
1 medium onion, sliced thin 

Preparation:
The peppers are seeded, the veins and soak in warm water for 15 minutes, then blend with the onion, garlic and salt. Strain and fry in two tablespoons of hot oil. When it is thick and spicy leaves the Fire. 
The tortillas are passed by the sauce and fry one by one in a pan with hot oil. Stuff with cheese, roll them up and place on a large plate. They sprinkle the cheese, then lettuce and finally the sliced onion. Serve immediately.
