Vista Grill - A new season, a new chef, new flavors and the same spectacularity! |

We accepted the invitation of Tere Cordova [Quality Director of Vista Grill and La Palapa] to taste the new menu of the Vista Grill Restaurant & Lounge, and the visit to the place turned out to be an extreme adventure of new flavors.
As always, framed by the sophisticated and romantic atmosphere of the restaurant, a spectacular view of downtown, the mountains and the bay, the event started in the area of the intimate bar with an emotional welcome of all invited guests by the manager Cuauhtémoc Gomez who immediately moved on to the presentation of the new chef Claudio Marras, native to Chile
The chef shared with us a detailed description of how the new menu had been designed. What stood out was that it was created with the purpose to offer completely new flavors which would truly make a difference in the present gastronomical world of Puerto Vallarta. He also mentioned that the influence in the new dishes comes from various countries with Chile, Italy, Asia and Mexico prevailing. The result has been a fusion of colors and flavors through which a simple and frank cuisine can be perceived and distinguished, respecting the taste of every used ingredient. With this they definitely achieved their objective.
The sample menu consisted of the following:
Entrees:
Baby green salad, plums, gorgonzala cheese, candied walnuts,
and hhibiscus, tossed in a sherry-shallot vinaigrette
Warm avocado sup with crispy potato wrapped shrimp and curry emulsion
Cucumber cannelloni stuffed with golden crab, over and herb tabouleh,
green tomato gazpacho and herb shrimp brochette
They distinguish themselves for their frank taste of each product used. The Mexican ingredients are the elite of every dish. They contribute to maintaining the appetite activated while waiting for what is next with the expectation to know whether what has been tasted up to this moment can be surpassed.
Specialities:

Seared salmon over leek and sundried tomato rissoto with champagne foam
Prosciutto wrapped chiken breast, drizzled capellini with broccoli,
mushrooms and asparagus smoked tomato sauce
Sole with confit of leeks, creamy mashed sweet potato,
poblano sauce and crispy prosciutto confeti
Oxtail lasagna, grilled baby corns and slow roasted eggplant, sage and beer sauce
They definitely establish a new decorative fashion compelling people to invest a few minutes in the contemplation of the dish before tasting it. Just as in the entrees, here the used ingredients can be clearly distinguished and of course those unique aromas stand out where each combination of ingredients claims to be an original. The accompanying sauces are a bath of contrast reviving the desire to continue to enjoy up to the last bite of each generously served dish.
Desserts:

Creme brulee de cajeta, helado de nuez y espuma de espresso
Terrina de chocolate y amareto, salsa de caramelo y helado de chocolate blanco
They are a sweet and exquisite finale of the culinary adventure through which we were guided by new dimensions of flavor.
The tasting was complemented by Chilean table wine that according to the comments was a wise choice.
The new menu offers a variety satisfying different tastes no matter whether the palates are traditional, sophisticated or demanding. While tasting each dish it can be perceived as well that the products and elements necessary for its preparation are first quality. Without including the drinks two people can enjoy a complete dinner with three courses for an average of seven hundred and thirty Pesos.
It can be observed through the service that the investment and the great care of the owner Alberto Perez to achieve excellence are beginning to bear fruits which are received, enjoyed and appreciated by his customers.
